Apple dumplings

Ingredients
•  2 granny smith apples
•  2 (8 oz.) cans chilled crescent rolls
•  1 cup butter + enough to prepare baking dish
•  1 ½ cup granulated sugar + 1 TBSP. for finishing
•  1 tsp. vanilla extract
•  6-8 oz. ginger ale or any light soda
•  1 tsp. cinnamon

Instructions
•  Preheat oven to 350° F. 
Butter 9x13 baking dish.
•  Peel apples and slice into 8 equal wedges. 
•  Unroll cold crescent dough sheets onto lightly floured surface. Separate into 16 triangles.
•  Place one apple wedge on wide base of triangle, roll apple toward pointed end allowing dough to overlap and wrap around apple.
•  Repeat with remaining wedges and triangles. Arrange in prepared baking dish.
•  In small saucepan, melt butter. Add sugar and vanilla, stir until just combined. Pour mixture evenly over wrapped apples.
•  Pour preferred soda over wrapped apples. Liquid should reach approximately half of dumpling height.
•  Mix cinnamon and sugar, sprinkle over dumplings.
•  Bake until golden and crispy on top, 30-45 min.
•  Best served warm with a scoop of ice cream.
